Born from a Love of Italy
Santino's Bondi was born from a singular passion: to bring the warmth of a traditional Italian trattoria and bar to Australia's most iconic beach. Founded by Italian-trained chefs and passionate local food lovers, we opened our doors on Campbell Parade with one mission — to serve authentic Italian cuisine, wood-fired pizza and a great glass of wine, all in one welcoming room by the sea.
Our hand-built Italian wood-fired oven is the beating heart of the kitchen. Running at over 450°C, it transforms our slow-fermented, hand-stretched dough into perfectly charred, airy pizzas in just 90 seconds — while our pasta bench turns out fresh tagliatelle, gnocchi and ravioli every day.
Every ingredient is chosen with care: San Marzano tomatoes from the volcanic soil of Mount Vesuvius, buffalo mozzarella from Campania, quality cured meats and the finest local Australian produce — paired with a curated list of Italian and Australian wines and classic cocktails at our bar.

We honour the 2,000-year-old tradition of Neapolitan pizza. Our dough ferments for 48 hours, our oven is Italian-built, and our technique is passed down through generations.

The Heart of It All — Our Wood-Fired Oven
Our hand-built Italian oven is the centrepiece of Santino's Bondi. Fuelled by sustainably sourced hardwood, it reaches temperatures exceeding 450°C — the exact temperature required for a truly authentic Neapolitan pizza.
The intense heat caramelises the crust in seconds, creating those signature leopard-spotted char marks and the perfectly soft, chewy interior that defines great Neapolitan pizza. You cannot replicate this in a conventional oven.
